Why is homemade oat milk slimy?

A sticky or thick oat drink is a useful clue about your recipe. The oat material, concentration, blending, heating and starch treatment all deserve a look.

Look at the whole process

Write down the oats, final water volume, blending method and temperature sequence. Compare batches at the same final concentration. Heating can change starch accessibility and viscosity; a change in texture after heating is different from a change caused by filtering or dilution.

What an amylase can change

Alpha-amylase breaks accessible starch into shorter chains. Flow Warm and Flow Hot provide different routes to oat-starch liquefaction. This can help you investigate starch-related viscosity, but it is not a claim that one enzyme fixes every kind of sliminess. Other oat components and process choices also contribute to mouthfeel.

Run a useful small trial

Keep a control without enzyme. Compare one amylase route using conditions compatible with the formulation you receive. Avoid chasing texture with sweetness enzymes

Sweet develops glucose from accessible starch fragments. Sweetness and viscosity are related to the process, but they are different targets. Decide whether the change you want is pourability, sweetness, protein functionality or coffee behaviour, then choose the relevant tool.
